What you need:
- 1 cup (unsalted) smooth peanut butter
- 1/2 – 3/4 cup semi sweet chocolate chips
- 1/2 cup brown sugar
- 1 tsp baking powder
- 1/2 tsp fine salt
- 1 egg
- OPTIONAL: 1/4 cup oat flour
Pre-heat oven to 350 degrees F. Combine all six ingredients. (Add the oat flour if you prefer a less gooey cookie.) Place 1 Tbsp rounded cookie dough balls on a tin foil covered rack. I like to use a fork to push the balls into more of a cookie shape before placing them in the oven. (Tip: sprinkle the raw cookies with almond meal before placing in the oven, for an “authentic” home-made look!) Bake for 12-14 minutes. Give these cookies a good amount of time to cool (approx. 20 min.) ~ Happy baking!
