What you’ll need:

- 4 Large & semi-sour apples (Boskoop)
- 1 orange
- 1 banana
- 2-4 Medjool dates
- 2 handfullz of hazelnuts
- 1 handful of walnuts
- ½ – 1 cup roasted & ground almond meal
- pure marzipan mass (usually comes in blocks)
- vanilla sauce (vegan prep packages available at select stores)
- almond milk
- cinnamon
- nutmeg
The Details:
Wash the apples and remove the insides, leaving a nice hollow cave for lot’s of stuffing. Hint: rub lemon zest along the insides to avoid browning. Now squeeze the orange and pour zest in the bottom of the baking pan you will use to bake the apples in. Place the hollow apples in nice & neat, ready for stuffing! For the stuffing itself you just have to throw the chopped nuts, dates, banana, and marzipan in with the almond meal – mix ‘n’ mash. Add cinnamon & nutmeg to this if desired. Now would be a good time to preheat the oven to 350 F, which gives you some time to stuff the apples. Bake for 30-40 minutes. While they are baking you can prep vanilla sauce (or a milk alternative of your choice), which will be poured over and alongside the apples when served, to add a little MMM! Merry Christmas
